Our Story

Aisling studied and worked abroad, before returning home. In 2014 she opened a café named WB’s Coffee House, in the premises which used to be the family pub. She was introduced to oysters when she met her oyster farmer husband Glenn.

Each tour lasts for approximately 1.5 hours.

What does the Oyster Farm Tour entail?
On the Oyster Farm Tour you will get to;

  • Learn all about Sligo’s ancient seafood.
  • Get exclusive access to a long established working oyster farm who produce delicious oysters.
  • Learn about the care, craft and expertise that goes into growing Sligo Bay Oysters from a tiny seed all the way to your plate.
  • Take in the views of the iconic mountains of Benbulben and Knocknarea, the grand expanse of Sligo Bay and learn about how land and sea together influence the taste of our oysters.
  • Complete the experience by enjoying oysters by the shore with a local craft beer, bubbles and refreshments.
What should you wear for the Oyster Farm Tour?
As you are outdoors for the duration of the tour it is recommended that you wear footwear such as wellies or hiking boots as the ground can be wet and all weather proof clothes incase of bad weather while on the tour.
How long will oysters last once I purchase them?
Oysters are packed fresh from the sea and have a best before day of up to 8 days if stored in the fridge from the packing date.
How should I store my oysters?
Your oysters should be stored in the fridge (0-4 degrees Celsius). Never submerge your oysters in water or ice as it can destroy them.
How do you open an oyster?
  • First, you’ll need to get a towel along with your shucking knife. Always use a towel to protect your hand and always use a shucking knife opposed to a regular knife for safety reasons.
  • Place the oyster in one hand on a folded towel and look for the natural hinge on your oyster and insert the shucking knife. From here you dig the shucking knife and turn form left to right until it starts to loosen.
  • Once the oyster is open, from here run the edge of the shucking knife under your oyster to release it from the shell.
Can I freeze my oysters?
We recommend enjoying fresh oysters but freezing oysters is possible. You can freeze raw oysters, technically, but it won’t be as good. If you do decide to freeze your oysters, make sure to only eat them cooked.
How do I know oysters are safe to eat?
Don’t eat raw shellfish if you’re pregnant or immune-compromised, and don’t eat something if it smells bad, looks bad or if you’re not sure if it’s been kept cool enough.
Are the oysters unshucked and still in their shell?
Yes. All our oysters come fresh, unshucked and still in their shells.
Are oysters good for you?
Yes. Oysters have many health benefits. They are low in calories, high in protein and contain many nutrients including zinc, copper, B12 and vitamin D.

Tis oyster season on the Emerald Isle. No better place to enjoy them than at WB’s Cafe in Sligo. As always in Ireland, the staff is as charming as the day is long. WB’s closes at 4 pm, but I think it’s closer to 3. Oysters aren’t a bad way to start the day

The value for oysters and cheese platter were great. The experience is a short video of the farm and a meeting with the owners/farmers. The oysters themselves compared very favourably to US northeast oysters, which were the best I had previously.
